sauce tsp (2 mL) freshly ground black pepper Pinch of salt cup (125 mL) extra virgin olive oil lb (340 g) kale stems removed sliced cup (125 mL) grated Parmigiano-Reggiano cup (125 mL) homemade croutons (optional) In a large wooden bowl whisk together the garlic anchovies mustard and egg yolk Stir in the lemon juice along with the Worcestershire sauce and Tabasco sauce Stir well to combine and season with the freshly ground pepper and salt Slowly drizzle the olive oil into the dressing whisking as you go to form an emulsion In a separate bowl massage the kale with a few tablespoons of dressing for a few minutes to break down and wilt the leaves slightly Add the kale to the remaining dressing and toss to coat Add the cheese and croutons if using and toss again Serve immediately Makes 3 to 4 servings Zucchini Gratin Zucchini tends often to be the vegetable turning mushy in the crisper Hereâs a quick and tempting recipe to help you work through zucchini abundance 4 tbsp (60 mL) olive oil divided 1 large onion thinly sliced tsp (2 mL) granulated sugar 3 lb (14 kg) small zucchini sliced 6 ripe Roma tomatoes thinly sliced 6 cloves garlic minced 1 tsp (5 mL) chopped fresh thyme Salt and freshly ground black pepper to taste 1 cup (250 ML) fresh or dried bread crumbs Optional: 1 cup (250 mL) grated Gruyere cheese cup (125 mL) grated Pecorino cheese In a sautĂ© pan over medium high heat heat 2 tablespoons of the olive oil Add the onion and cook for about 10 minutes until soft and beginning to brown Reduce the heat to low cover the pan and sweat for 10 minutes Remove the lid and sprinkle the onion with the sugar Continue to cook stirring until the onion is nicely caramelized Set aside Preheat the oven to 350 F Drizzle 1 teaspoon of the olive oil into a shallow gratin dish and arrange a third of the zucchini in the dish overlapping in concentric circles Top with half of the caramelized onion Add half of the tomatoes a third of the minced garlic a little thyme and salt and pepper and about cup (60 mL) of the bread crumbs Repeat the layers Add a final layer of zucchini season with the remaining garlic and thyme and a little salt and pepper and top with cup (125 mL) of the bread crumbs and the remaining 1 2/3 tablespoons of olive oil Bake for 1 hour Drain any excess liquid top with cheese if using and bake for another 20 to 30 minutes until bubbling and browned Makes 4 servings Apple Crisp Let your pantry be your guide Instead of blueberries you can substitute other fruit or berries that need to be used up cup (60 mL) granulated sugar 2 tbsp (30 mL) honey tsp (2 mL) ground cinnamon tsp (1 mL) ground nutmeg 3 tbsp (45 mL) brandy Calvados or Grand Marnier 5 large Granny Smith apples peeled cored sliced 2 cups (500 mL) blueberries 3 tbsp (45 mL) all-purpose flour Topping: 3 tbsp (45 mL) butter softened cup (69 mL) whole wheat flour cup (125 mL) packed brown sugar cup (125 mL) rolled oats 1 tsp (5 mL) ground cinnamon Pinch of salt In a large bowl combine the sugar honey cinnamon nutmeg and brandy and then add the sliced apples and the blueberries Toss to coat the fruit with the spices and set aside to marinate for 1 hour until the fruit releases its juices Preheat the oven to 350 F Butter a shallow baking dish Stir the flour into the fruit and spice mixture and then pour the mixture into the prepared baking dish To make the topping: In another bowl combine the butter flour and brown sugar mixing to form coarse crumbs Stir in the rolled oats and add the cinnamon and salt Spread the oat mixture evenly over the fruit in the baking dish Set the baking dish on a baking sheet (this will save your oven if any juice runs over) and bake for about 45 to 55 minutes until bubbling and golden brown Serve the crisp warm with vanilla ice cream or lemon yogurt Makes 6 to 8 servings Peach Kuchen Hereâs an example of what Cinda Chavich author of The Waste Not Want Not Cookbook calls a âmotherâ recipe Use the coffee cake base and switch up the peaches for apples plums and other tree fruits 4 large peaches peeled sliced cup (60 mL) maple syrup 2 cups (625 mL) all-purpose flour 2 tsp (10 mL) baking powder tsp (1 mL) salt cup (60 mL) butter softened cup (125 mL) granulated sugar 1 large egg 2/3 cup (160 mL) buttermilk Topping: cup (125 mL) granulated sugar 1/3 cup (80 mL) all-purpose flour 1 tsp (5 mL) ground ginger Finely grated zest of half a lemon cup (60 mL) butter cup (125 mL) chopped pecans or hazelnuts Preheat oven to 350 F In a bowl toss the peaches with the maple syrup Set aside In another bowl combine the flour baking powder and salt In large bowl use an electric mixer to cream together butter and sugar until fluffy then beat in the egg Add the dry ingredients alternating with the buttermilk and blend well For the topping mix the sugar flour ginger lemon zest butter and nuts in a bowl and using a fork or your hands combine to form a crumbly mixture Butter a 10-inch springform pan Spread two-thirds of the batter evenly in the pan and arrange the peach slices in a pattern overtop Dot the remaining batter over the fruit leaving spaces between spoonfuls of batter Sprinkle with the topping Bake for 45 to 55 minutes until the kuchen is nicely browned and a toothpick inserted in the centre comes out clean Cool on a wire rack in the pan for 30 minutes Release from the springform pan to serve Cut into
